These are probably my children’s favorite cookies. But I’d be lying if I said I didn’t love them too- “ they’re just yummy for the tummy” as the kids say...
Makes 5 Dozen Cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup(2 sticks)unsalted butter, softened
1 cup firmly packed light brown sugar
1/3 cup granulated sugar
1 large egg,at room temperature
2 tablespoons milk
1 1/2 teaspoons vanilla extract
1 1/2 cups coarsely chopped toasted pecans (see note)
1 cup peanut butter chips
3/4 cup coarsely chopped peanut M&Ms
Note: To toast the pecans, place on a baking sheet in a 350 degree oven for 15 minutes, or until lightly browned and fragrant.
Preheat the oven to 350 degrees.
In a small bowl, combine the flour, baking soda, and salt. Set aside.
In a large bowl, cream the butter with the sugars, until smooth, about 2 minutes. Add the egg, milk, and vanilla, and beat well.
Add the dry ingredients and mix thoroughly. Stir in the pecans,peanut butter chips, and peanut M&Ms.
Drop by rounded tablespoons onto undressed cookie sheets, leaving several inches between for expansion. bake for 10-12 minutes, or until lightly golden.
Cool the cookies on the sheets for 5 minutes, then remove to a wire rack to cool completely.
