This recipe is an adaption of the meatloaf recipe in my cookbook “At Home With Magnolia “. It has this really great brown sugar ketchup glaze on top which makes for super tasty meatloaf sandwiches the next day.
makes 6-8 servings
1/2 cup ketchup
1/3 cup light brown sugar
2 teaspoons dry mustard
1 tablespoon olive oil
1 cup finely chopped yellow onion
11/2 pounds ground meat ( I like a combination of beef, pork and veal )
1/2 cup seasoned breadcrumbs
2 large eggs, beaten
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees.
to make the glaze:
In a small bowl, whisk together the ketchup, sugar, and mustard. Set aside.
to make the meatloaf:
Heat the oil in a small skillet over medium heat. Add the onions, reduce the heat to medium-low, and cook stirring occasionally, until the onions are very tender. Set aside to cool to room temperature.Place all of the ingredients in a large bowl and blend with your hands until well combined. Transfer into a 9x51/2x3-inch glass loaf pan.
Bake for 1 hour removing from the oven halfway through the cooking time to add the glaze to the top.
