It’s a sure sign that summer is here when we have egg salad sandwiches and lemonade for lunch on the porch. It’s nice to eat lighter this time of year, but lighter does not have to be boring!
makes 4 sandwiches
6 hard boiled eggs, chopped
1 cup diced and seeded cherry or grape tomatoes
1/2 cup chopped scallions (greens and white parts)
1/3 cup mayonnaise
2 tablespoons chopped fresh flat leaf parsley
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/2 teaspoons paprika
1/4 teaspoon salt
8 slices white bread
Place all of the ingredients (except the bread of course!) in a medium size bowl and mix together. Serve on white bread. Simple, easy, delicious!
