Who doesn’t love homemade creamed corn? It’s truly easy to make and so delicious!
makes six servings
6 cups fresh or frozen corn kernels
1 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
3 tablespoons sugar
1 tablespoon light brown sugar
1 teaspoon salt
1/2 teaspoon white pepper
Bring a large saucepan of cold water to a boil. Add the corn, cover, and cook until tender, 2-3 minutes. Remove from the heat, drain, return half of the corn to the pot ( off heat ), and transfer the other half to a blender with the remaining ingredients. Process until smooth, 1-2 minutes. Transfer the corn mixture back to the pot with the whole corn kernels, and over medium-low heat, stir together until well blended and heated through, 2-3 minutes.
